Based on http://www.friendsforweightloss.com/featured-recipe-of-the-week-vegan-falafel/ using ingredients I had on hand - pepper and onion had been caramelized.

Recipe Ingredients for Falafel

1 3/4 c Garbanzo Beans (chickpeas) , rinsed and drained
2 garlic cloves, minced
2 tbsp flat-leaf parsley
2 tbsp cilantro
1/2 vidalia onion , roughly chopped
1/2 large red pepper
1 tsp ground cumin
1 tsp sesame oil
1/2 tsp chili powder
1/2 tsp dried oregano
1 tsp lemon juice
1/4 t tabasco
2 tbsp whole wheat pastry flour
1/2 t sea Salt
1/4 t black pepper
1 tbsp olive oil

Recipe Directions for Falafel

Combine everything except olive oil in food processor and process until fully combined. Shape into 4 patties. Cook in non-stick skillet with olive oil ~3 minutes per side.
