Falafel (taken from Tryingtobefahad.com)

Recipe Ingredients for Falafel

250 g Chickpeas, drained
250 g fava beans, drained
297 g firm tofu
1 onion
2 cloves Garlic
2 tbsp Parsley
1 tsp Cumin
1/4 tsp salt
1/4 tsp pepper
2 tablespoons whole wheat flour
1/2 tsp baking powder

Recipe Directions for Falafel

  1. Spray non-stick cooking spray on a baking tray and pre-heat at 350.

  2. Mash chickpeas in a blender or a food processor, adding onions and garlic.

  3. Add remaining ingredients until the mixture turns into a thick paste-like consistency.

  4. Shape into small balls and line them up on the baking tray.

  5. Bake for 15-20 minutes.
