Delicious Mediterranean dish with a twist

Recipe Ingredients for Falafel Pizza

1 c falafel mix
7 oz Athenos Roasted Garlic Hummus
1/2 c cucumber
4 oz black olives
1/2 c tomato
2 tbs fresh oregano

Recipe Directions for Falafel Pizza

  1. Pre-heat broiler to 550F.

  2. Prepare falafel mix according to package directions.

  3. Thinly slice olives, cuke & tomato.

  4. Spray pizza pan with cooking spray. Spread falafel mixture in 1/2 to 3/4 inch thick circle on pizza pan.

  5. Cook under broiler for 3 minutes; rotate 90 degrees and broil 3 more minutes. Remove from oven; let cool.

  6. Top "pizza" crust by spreading hummus evenly over it, then layering cucumber, tomato, olives and oregano.

  7. Cut into 8-16 wedges and serve at room temperature.
