Very good, low carb "potatoe" salad

Recipe Ingredients for Fake Potatoe Salad

3 cup (1" pieces) Cauliflower
1 cup, pared, chopped Cucumber, Peeled
6 large Egg, Whole
4 large (1" to 1-1/4" dia) Radishes
4 medium (4-1/8" long) Onions, Spring Or Scallions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 stalk, medium (7-1/2" - 8" long) Celery
10 serving kraft mayo with olive oil reduced fat
6 tsp Frenchs Mustard Classic Yellow

Recipe Directions for Fake Potatoe Salad

  1. Steam 1/2 head of cauliflower

  2. boil 6 eggs

  3. Cool cauliflower and boiled eggs

  4. mash together

  5. Chop rest of veggies and add to cauliflower and eggs

  6. mix mayo and mustard together and pour over veggies

  7. mix well, add diced fresh dill, salt and pepper to taste.
