Lasagna made with macaroni noodles

Recipe Ingredients for Fake Lasagna

1 lb macaroni
3/4 lb ground beef, 80% lean
7 oz mozzarella, part skim milk cheese
2 oz Parmesan cheese
24 oz tomato sauce
1 tbs thyme
1 tbs Italian seasoning
1 medium onion
5 cloves garlic
1 tbs olive oil
6 saltine crackers

Recipe Directions for Fake Lasagna

  1. Cook macaroni for 5-7 minutes. It should still be a little hard. Brown meat in a dry skillet.

  2. Sweat onion and garlic in olive oil with fresh thyme. When onion just starts to brown add tomato sauce. Add agave syrup, salt and Italian seasoning and cook until heated. Remove from heat and use stick blender to get a smooth sauce. Adjust seasoning if needed.

  3. Apply a thin layer of sauce to a 9x11 glass baking dish that has been coated with non-stick cooking spray. Add 1/2 the noodles on top of that. Sprinkle lightly with mozzarella cheese. Next add all the ground beef and top with 1/3 to 1/2 of the remaining sauce. Add a layer of mozzarella cheese then top with the remaining noodles. Pour the rest of the sauce on top and then cover with the remaining mozzarella cheese. Grate the 2 ounces of parmesan cheese on top and then sprinkle with crushed saltines.

  4. Bake in a 350 oven for 30-45 minutes.
