Recipe Ingredients for fake gumbo

6 oz Hot Italian Sausage
2 cup Beet Greens
1 cup, chopped Turnip Greens
1 cup Kohlrabi
1 cup, diced Celery
0.5 cup, chopped Onions
3 clove Garlic
1/4 cup White Flour, Unbleached
1 cup Organic Chicken Cooking Stock
1 cup, chopped or sliced Tomatoes, Red, Ripe
3 cup, chopped Squash, Summer, Zucchini, Includes Skin
4 large (1" to 1-1/4" dia) Radishes
1 tbsp Olive Oil

Recipe Directions for fake gumbo

  1. cut up the sausage and cook it in a heavy pot until done, remove the sausage, but reserve the fat

  2. add the chopped garlic, onions, and chopped celery and soften them

  3. add the flour and cook it until the mixture browns slightly

  4. add the stock until it makes a gravy, stirring to remove the lumps

  5. remove the gravy from the pan

  6. add the olive oil and warm it in the same pot

  7. saute the greens

  8. add the remainder of the veggies and cook well

  9. return the sausage and the gravy to the pot and heat through, cooking for a bit longer to develop the flavors

  10. add cayenne or paprika and salt to taste

  11. serve with brown rice
