A pasta like crust with a creamy veggie filling topped with crunchy oven baked veggies

Recipe Ingredients for "Fake-etti" veggi bake

1 tsp olive oil
16 oz spaghetti squash
30 oz part skim ricotta
3 egg whites
7 oz diced tomatoes
2 oz green bell pepper
2 cups broccoli
1/4 cup parmesan cheese

Recipe Directions for "Fake-etti" veggi bake

  1. Cook spaghetti squash in oven on low for a couple hours till you can shred inside with a fork. Should resemble spahetti.

  2. Let cool.

  3. lightly oil a 9 X 13 pan with 1 tsp olive oil

  4. spread squash over bottom of pan to make a crust

  5. mix the following:

  6. ricotta,tomatoes,bell peppers and any dried herbs or seasonings you wish.

  7. layer top with broccoli spear

  8. sprinkle parmesan on top.

  9. Pop into a 375 degree oven for 40 minutes to an hour.

  10. You may wanna top a small dollop of spaghetti sauce to get that "spaghetti" experience
