This is a surprisingly tasty sub for egg salad, with less cholesterol/calories.

Recipe Ingredients for Fake Egg Salad

1 pound firm tofu
1/4 cup mayonnaise
1/4 cup yogurt
3 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/4 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped red bell pepper
1 tablespoon capers
2 tablespoons chopped parsley
2 tablespoons chopped dill

Recipe Directions for Fake Egg Salad

  1. Chop tofu into 1/4" cubes

  2. Whisk together mayo, cider vinegar and yogurt

  3. Combine all ingredients and toss to mix

  4. Let sit for a few hours or overnight, so the tofu can soak up the flavors.
