Recipe Ingredients for Fajita Vegetable Soup

1 cup mushrooms, sliced
1/4 cup onion, sliced
1/4 cup celery, sliced
1/4 cup sugar snap peas, sliced
1/4 cup carrots, sliced
1/4 cup tomato, quartered
2 cups vegetable broth
1 cup rice, cooked
1 cup cannellini beans
1 cup mexican cheese blend, shredded
1 fajita seasoning to taste

Recipe Directions for Fajita Vegetable Soup

  1. Saute onion, celery and carrot in a medium saucepan over med-high heat until tender.

  2. Add mushrooms, carrots and tomatoes. Cook until heated through.

  3. Add vegetable broth and seasoning, bring to a boil. Skim off any foam. Simmer for 30 minutes.

  4. Add rinsed beans and rice. Simmer until heated through.

  5. To finish off, serve soup, sprinkle 1/4 cup cheese per serving and add sour cream (or plain greek yogurt) to taste.
