Thinly sliced chicken in a fajita inspired sauce

Recipe Ingredients for Fajita style chicken

1 lb chicken breast
2 cups baby spinach
6 oz tomato sauce
1/2 cup onion
1 tsp soy sauce
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chili powder

Recipe Directions for Fajita style chicken

  1. Slice chicken breast into very thin strips. Season with spices.

  2. Heat non stick skillet and add a little bit of cooking spray instead of oil.

  3. Sautee onions until slightly translucent.

  4. Throw in the chicken and cook until browned.

  5. Once chicken is cooked, add the tomato sauce and soy sauce, then stir.

  6. Throw in spinach and cook until spinach is reduced.

  7. Serve with rice or on tortillas.
