Quick and Easy Dinner. Can be easily doubled.

Recipe Ingredients for Fajita Salad

4 oz Boneless skinless Chicken Breast
1/2 cup Onion
1/2 cup Green Pepper
1 tbl Olive Oil
1 oz. Colby, Monterey Jack Cheese
1 cup Lettuce
1/4 cup Salsa
1/4 cup Low Sodium Chicken Stock

Recipe Directions for Fajita Salad

  1. Slice Chicken Breast and Saute in .5 T Olive Oil until cooked, salt, and spice to taste. Remove and set aside. With Remaining oil, cook Onions and Peppers. Salt and spice veggies. When cooked, return chicken to skillet and add chicken stock to deglaze pan.

  2. Put on bed of Lettuce and top with cheese and salsa.
