Beans, onion, and chicken over green salad with cheese

Recipe Ingredients for Fajita Salad

1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 lb skinless chicken breast
6 cups shredded romaine lettuce
1 1/2 cups bell pepper
1 cup red onion
1/2 cup shredded monterey jack cheese
15 ounces of cooked pinto beans, rinsed and drained
2 medium tomato, cut into 8 wedges

Recipe Directions for Fajita Salad

  1. combine spices and oil in bowl, toss with chicken to coat. place in a large nonstick skillet over medium heat, saute until cooked, add onion slices and then beans. 8 -10 mins.

  2. Divide lettuce and salad ingredients among 4 plates, top with chicken mixture and serve with creamy cilantro-lime sauce.
