Vegetarian Fajita Quesadilla. You can cut back on the calories by cutting out some of the cheese, sour cream, or avacado.

Recipe Ingredients for Fajita Quesadilla

4 whole wheat tortillas
1 bell pepper
1 onion
1 tsp garlic
1 tbsp extra virgin olive oil
1 cup low fat cheese
1 avocado
1 large tomato
4 tbsp sour cream

Recipe Directions for Fajita Quesadilla

  1. Saute bell pepper, onion, and garlic in the evoo. You could add some heat here as well.

  2. Layer vegies on two of the tortillas. Top each with half of the cheese and another tortilla.

  3. Bake at 350 until cheese melts and tops are golden.

  4. Serve with lots of tomato, mashed avocado, and sour cream.
