1 1/4 cup warm water
1/4 oz active dry yeast
1 tsp sugar
2 cups brown rice flour
13 g flax seed meal
1/2 cup oat bran
1/4 tsp red pepper flakes
1/2 tsp black pepper, divided
1 tbsp olive oil, for kneading and oiling
1 cup leeks
1/4 cup garlic, thin sliced
2 tbsp parsley, chopped
1 tbsp rosemary, chopped
2 tbsp nutritional yeast

This makes one flat bread 12" diameter in black iron skillet, divided into 8 pieces is the 1/8th serving for this nutritional information. Combine water, yeast, and sugar, let stand about 15 minutes until fully blown and foamy. Mix dry ingredients together (use half of the cracked black pepper) then add the yeast-water mixture and knead adding more flour or meal if necessary to make elastic, form a ball. Place in greased bowl, twist to grease and then flip over and twist again, then cover with wax paper and clean dishcloth. Let double, in a warm room it takes about 1 hour. Lightly oil a pan and punch down the dough that has doubled, place on pastry cloth coated with with some flour or bran and knead again. Place dough in the pan and use a little olive oil to press out to fit into edges and sides of the pan, making little dimples in the dough. Then place the veggies and seasonings including balance of the cracked pepper on the dough and let rise again until doubled. I used 1/2 of a fresh hot cherry pepper instead of the red pepper flakes. i also put some cubenello pepper slices on it. When dough has doubled, sprinkle with the nutritional yeast and bake at 425 oven for 20-25 minutes or until slightly golden brown. Transfer the bread to a rack to cool. Serve warm or at room temperature. I topped with 1/8 cup of my homemade toasted and ground pumpkin-sunflower seeds (about 8 calories per slice.) i didn't have any nutritional yeast.
