Beautiful, delicious, healthy, fresh vegetable soup for spring!

Recipe Ingredients for Fabulous Spring Soup

2 onions, chopped
2 leeks, chopped
4 small potatos, chopped
1 turnip, chopped
2 carrots, chopped
4 celery stalks, chopped
2 yellow squash, chopped
2 zuchinni, chopped
3 cups kale, chopped
26 1/2 oz tomatos, diced
6 grams kelp
12 cups water
1 1/2 cups fresh basil, chopped
3 cloves garlic, diced
1 tsp olive oil

Recipe Directions for Fabulous Spring Soup

In a giant soup pot, add kelp and leek greens to water and bring to a boil. Reduce to a simmer for 30 minutes. Remove leak greens and add all vegetables (do not add basil, garlic or olive oil). Lower heat and cover. Cook at a simmer until tender ? about 20-30 min. Meanwhile, blend the garlic cloves with a little salt in a food processor or blender. Add olive oil and the basil and blend some more. Stir basil mixture into soup, let simmer a few more minutes (or as long as you'd like to let the flavors blend). Remove kelp and either chop up and return to soup or discard. Serve and enjoy!
