Recipe Ingredients for FABULOUS RUM CAKE

2 cups Wheat Flour, White, All-purpose, Enriched, Bleached
1 cups Sugars, Granulated
4 teaspoons Leavening Agents, Baking Powder, Low-sodium
1 teaspoon Salt, Table
1 cups Butter
1 cups Walnuts, Black, Dried
3 oz. Puddings, Vanilla, Dry Mix, Instant
1 cups Milk, Fluid, 3.25% Milkfat
4 Egg, Whole
1 cups Vegetable Oil, Oat
1 cups Butter
1 cups Water
1 cup Sugars, Granulated

Recipe Directions for FABULOUS RUM CAKE

  1. Preheat oven to 325 F.

  2. Combine ingredients to the single asterisk (*the basic cake mix ingredients) in a bowl and beat on low speed until mixture looks like fine gravel.

  3. Add ingredients to the double asterisk (**remaining cake ingredients) EXCEPT the walnuts, to the basic mixture and beat on medium speed for 2-3 minutes until mixture is very smooth, scraping bowl if needed. Spray Bundt pan with non-stick cooking spray. Sprinkle walnuts into bottom of Bundt pan. Pour batterinto Bundt pan. Bake in the middle of oven for 55 minutes until fluffy and golden and cake tests done with toothpick. Remove from oven and place on cooling rack.

  4. In a 2 quart saucepan, combine remaining ingredients to the triple asterisk (***glaze ingredients) EXCEPT rum, and bring to a slow boil. Reduce glaze to a simmer and cook until all sugar is dissolved and syrup has thickened a little. Remove glaze from heat and let cool to 170 F, then add the rum to the glaze.

  5. Poke several small holes in the cake with a skewer and slowly pour glaze all over the cake while it is still in the Bundt Pan. Make sure you get some down the outsides and insides. Allow cake to thoroughly cool before turning out of pan onto a flat surface/plate.

  6. This cake is delicate, so once it has been turned out, it cannot be easily moved. Can be eaten when thoroughly cooled but is better the next day.
