This is a very low-cal version of a popular Polish winter soup. The recipe calls for dill pickles which you'll have to grate, but you can buy them already grated in Polish stores. Dirt cheap and yummy :) Oh and a word of explanation - the quantities of everything might seem idiotic, but I was weighing my ingredients as I went and that's what I put into the analyzer. Consider those just general guidelines, ok?

Recipe Ingredients for Fabulous Low-Cal Dill Pickle Soup!

6 cups water
235 g dill pickles
124 g carrots
187 g potatoes
2 chicken boullion cube
50 g sour cream

Recipe Directions for Fabulous Low-Cal Dill Pickle Soup!

  1. Boil 6 cups of water and add the chicken cubes (you can substitute them for vegetable cubes and that's what I did, but the recipe analyzer couldn't seem to find them. So chicken it is!)

  2. (Optional: for a bit more flavour, you can throw in a small piece of leek and some celery, but after they're cooked, just fish them out and chuck them.)

  3. Peel and dice the potatoes, peel and slice the carrots. Add them to the pot. Cook until soft (approx. 10-15 min). If you added leeks and celery, now it's time to throw 'em out.

  4. Grate the pickles (or open a jar of already grated ones) and add them to the pot. Now, you can add as much or as little as you like. I add a lot, 'cause I like my food salty.

  5. Put the sour cream in a separate container (say, 4-cup capacity) and once the soup has boiled, add about 2 cups of it to the sour cream. Whisk together. This prevents the sour cream from curdling.(Oh and I actually used 100 g of light sour cream, but again - the analyzer wouldn't honour it. The calories are the same, so pick whichever you want.) Add it to the pot, stirring all the time.

  6. Wait for it to boil - and enjoy!

  7. Optional - you can add some fresh or dried dill just before serving.
