Fabulous Carrot Dip Recipe

a little like humous, but actually lower in calories and a way more interesting, versatile flavour. This recipe actually makes a generous cup of dip, enough for a small party, but I tend to eat it all at once because it's just SO GOOD! :)

Recipe Ingredients for FABULOUS carrot dip

2 carrots
1/2 small onion
1 clove garlic
1/2 cup lemon juice
1 pinch salt
1 tsp olive oil

Recipe Directions for FABULOUS carrot dip

  1. boil chopped carrots and onion until soft

  2. drain (keep the water, and reuse as no-salt vegetable stock!!)

  3. put in a food blender with the chopped garlic and blend until smoothe

  4. stir lemon juice and olive oil, add salt/pepper to taste (option: sprinkle paprika powder over the top)

  5. you could also add orange juice (sweeter) or lime (sourer) for different affect, and a pinch of mint instead of paprika

  6. serve with dipping vegetables, salads, crackers, spread on bread or anything else you fancy!
