Replace pasta with spaghetti squash and never miss it. Use shiitake mushrooms for a healthier sauce. Big chunks of veggies are great.

Recipe Ingredients for Extra Veggie Spaghetti Squash

2 cups spaghetti squash, cooked and shredded
1/2 tsp olive oil, extra virgin
1/2 large onion, chopped coarsely
1/2 green pepper, chopped coarsely
6 medium mushroom caps, quartered
6 kalamata olives
2 cups Prego spaghetti sauce
1/2 tsp hot peppers
2 tbsp Parmesan cheese, shredded

Recipe Directions for Extra Veggie Spaghetti Squash

  1. Cut spaghetti squash in half. Place cut side down in glass dish with 1/4 inch water, cover in plastic wrap, and cook in microwave for 7 to 10 minutes. Let cool slightly.

  2. Using a fork, shred the flesh of the squash to make the "spaghetti".

  3. Meanwhile, saute together in olive oil the onion, pepper, mushrooms, and olives until crisp tender.

  4. Add the olives, package of hot peppers, and spaghetti sauce. Warm though.

  5. Serve over shredded spaghetti squash and sprinkle with parmesan cheese. Enjoy!
