Recipe Ingredients for Extra Light Potato Soup

1 cup skim milk
1 1/2 cups water
2 chicken bouillon cubes
1 medium potato
1 cup cauliflower florets
1/4 cup onion
1/4 cup celery
1 tbsp. butter
1/4 tsp. pepper
1 tbsp. flour
2 tbsp. light sour cream

Recipe Directions for Extra Light Potato Soup

  1. In a medium sauce pan treated with nonstick spray, over medium heat, sweat the onion and celery until the onion is translucent. Be careful not to let it get brown.

  2. Add the water, potatoes, cauliflower, and bouillon cubes.

  3. Cook until the potatoes and cauliflower are done.

  4. Mash lightly.

  5. Mix flour with the sour cream in a small mixing bowl. Add half of the milk to the flour mixture, and mix well.

  6. Add the remaining milk and butter and pepper to the potatoes and stir to mix well.

  7. Add the flour mixture to the potatoes and stir to mix well.

  8. Heat the soup up gently over low heat just until it is thickened. Do not overcook at this point.
