Original recipe uses white rice and milk. You can easily replace milk in this recipe so it's made with all soy milk.

Recipe Ingredients for Extra Creamy Brown Rice Pudding

1 1/2 cup brown rice, cooked
3/4 cup so nice original
1 1/4 cup 2% milk
1/3 cup sugar
1/4 tsp salt
1 egg
1 tbsp butter
1/2 tsp vanilla

Recipe Directions for Extra Creamy Brown Rice Pudding

  1. Mix cooked rice, with 1.5 cups of the milk, (which will reserve 0.5 cup of milk for later), sugar and salt in a sauce pan, and heat over medium heat until thick and creamy. About 15 to 20 minutes. Stir frequently to prevent it from burning.

  2. Beat egg well and mix with reserved milk. Stir into pot and heat for another 2 minutes, stirring constantly.

  3. Remove from heat and mix in butter and vanilla.

  4. Serve warm. Enjoy.
