Recipe Ingredients for Extra Corny Cornbread

135 g plain flour (4.7 oz.)
125 g cornmeal or fine polenta (4.4 oz.)
2 tsp baking powder
1/2 tsp sea salt
1/2 tsp baking soda
1 black pepper
150 g fresh corn kernels (5.3 oz.)
100 g cheddar cheese, grated (3.5 oz.)
2 spring onions, finely chopped
1 jalapeņo peppers, chopped (or a good pinch or two of chilli flakes)
2 eggs, lightly beaten
1 tbsp honey or sugar
140 ml buttermilk (4.9 oz.)
140 ml whole milk (4.9 oz.)
30 g unsalted butter, melted (1 oz.)

Recipe Directions for Extra Corny Cornbread

  1. Preheat the oven to 425 F. Grease a 23cm x 23cm x 4cm baking tin [dish] with butter and dust with flour, shaking out any excess. (Rather than the "tin" with butter and flous, try the real Southern version by using a cast iron pan, preheated in the hot oven with some vegetable oil -- it sizzles when the batter is added and forms a crispy crust.)

  2. In a bowl, whisk together the flour, polenta, baking powder, salt, bicarb [baking soda], and pepper. Stir in the corn, cheddar [cheese], onions, and jalapeņo.

  3. Pour the eggs into a jug [bowl] with the honey, buttermilk, milk, and melted butter, and stir. Pour into the dry ingredients, stirring, until everything is just combined. Don't overmix - a few lumps in the batter is fine.

  4. Get this into the oven as quickly as possible once the soda and buttermilk start reacting.

  5. Pour the batter into the prepared pan, and bake until the top is golden and the edges have slightly pulled away from the sides, about 20-25 minutes. Transfer to a wire rack to cool for a few minutes before cutting into serving sizes. Serve warm.
