Low sugar, low fat, little bit of everything muffins.

Recipe Ingredients for Experimental muffins

1 1/2 cups fiber one cereal
1 1/4 cup skim milk
1 1/4 cup whole wheat flour
3 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 mashed banana
2 eggs
1/4 cup peanut butter
1 teaspoon vanilla
1/2 cup craisins
3/4 cup apple, chopped and pealed
1/4 cup chopped walnut
1/4 cup sweetened coconut

Recipe Directions for Experimental muffins

  1. Combine cereal and milk; let soak 30 minutes.

  2. In separate bowl, combine flour, powder, cinnamon, and salt.

  3. Mash banana; add slightly beaten eggs and vanilla. Beat. Add peanut butter; beat well.

  4. Add craisins, apple, nuts, and coconut to cereal mixture. Stir gently.

  5. Add flour mixture to cereal. Stir gently.

  6. Gradually combine moist mixture and cereal mixture.

  7. Spoon into slightly greased muffin tins.

  8. Bake 14-18 minutes or until toothpick comes out clean.
