Gluten free chocolate chip cookies (chick pea flour)

Recipe Ingredients for experimental chocolate chip cookies

1 1/2 cups chickpea flour, toasted
1 tbsp flaxseed oil
4 oz whey protein
6 oz unsweetened chocolate, chips (70%)
4 eggs
1/2 cup molasses
2 tbsp cinnamon
1/2 cup flaxseed meal
2/3 cup almonds, chopped
1 tsp baking powder
1 tsp baking soda
1 pinch salt

Recipe Directions for experimental chocolate chip cookies

  1. Toast chick pea flour until dark golden. This helps to take away the bitterness and give it a nicer flavor.

  2. Mix dry ingredients: cinnamon, protein, flaxseed meal, baking soda, baking powder and salt. Add almonds and chips now, or at the end.

  3. Make a well and put eggs, oil, and molasses in it. Mix well until all ingredients are blended to cookie dough consistency.

  4. The recipe should make about 36 cookies, or 27 large ones. They are delicious and good for you, and can be used for breakfast or for post workout meals. I love them dunked in hot masala tea so that the chocolate chips melt and their sweetness is more acessible.

  5. If they cook together, just cut in between them to separate them. Add some cornstarch or amaranth flour in the next batch if they are too soft.
