A great combination of Asian and Mediterranean flavors. Feel free to change up the spices.

Recipe Ingredients for Exotic eggplant salad

1 teaspoon sesame oil
1/4 teaspoon sesame seeds
2 cloves garlic
1/8 teaspoon salt
1/3 eggplant
1 small tomato
1/8 teaspoon oregano
1/8 teaspoon ground cumin
1/8 teaspoon celery seeds

Recipe Directions for Exotic eggplant salad

  1. Dice eggplant. Toss with salt and let drain over colander for 20-30 minutes.

  2. Heat oil over high heat and add garlic and sesame seeds. Careful not to burn the seeds.

  3. Add tomato and spices and stew over medium heat, about 10 minutes. Add water when needed.

  4. Transfer the tomato to a bowl when it is ready and brown the eggplant, about another 10 minutes.

  5. When eggplant is cooked through and soft, add to the tomato. Toss, season with salt and pepper.
