Recipe Ingredients for EW Thai Green Curry with Tofu

2 tsp 100% Pure Canola Oil
16 oz Extra Firm Tofu
16 oz Eggplant
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
8 fl oz Lite
1 serving Chicken Broth
6 tsp unpacked Sugars, Brown
1 tbsp Green Curry Paste
1 tbsp Fish Sauce
1 serving Lime Juice
8 tablespoon Basil

Recipe Directions for EW Thai Green Curry with Tofu

  1. Cut tofu into 1-inch-cubes. Heat oil in a Dutch oven or large straight-sided skillet over medium high heat. Cook the tofu, stirring until beginning to brown. Transfer to a plate.

  2. Add eggplant, bell peppers, coconut milk, broth, brown sugar, curry paste, fish sauce (if using) and lime juice to the pan. Bring to a boil, stirring. Reduce heat to a simmer, cover and cook, stirring occasionally, until the vegetables are tender, 8 to 10 minutes.

  3. Return the tofu to the pan; stir to coat with the sauce and cook until heated through, about 1 minute. Remove from heat; stir in basil and serve immediately.
