muffins- they are great, but a little moist, so I refrigerate to prevent from going bad. also good for freezing and thaw as you go. recipe originally calls for 1/2 c. raisins instead of the cranberries and blueberries. You can also omit the chia seeds, but I have them on hand. To lessen the sugar content, you may cut the brown sugar to 1/2 c.

Recipe Ingredients for Everything muffin

1 c. Essential Ground Flaxseed, Organic
1 c. whole wheat flour
85 g oat bran
1/2 c. Chia Seed
1 c. brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tbsp cinnamon
1 1/2 c. shredded carrots
3 apples
1 c. chopped almonds
1/2 c. dried cranberries
1/2 c. dried blueberries
3/4 c. Rice Dream Vanilla Enriched
2 eggs
1 tsp vanilla

Recipe Directions for Everything muffin

  1. Chop/ Grate carrots and apples, chop nuts

  2. mix dry ingredients (flour, flaxseed, oat bran(1c), sugar, chia seeds, ect.) Add into dry ingredients: carrots and apples, dried fruit and nuts.

  3. mix well

  4. stir together eggs, vanilla and milk and stir into batter until well moistened.

  5. Fill cupcake papers until 3/4 full and bake at 350 degrees for 20-25 min

  6. Makes 24 muffins
