The "Ginger" is actually Uncrystalized Ginger Candy which has sugar. The system couldn't find it so I added 1 Tbsp of sugar to the reicpe to compensate for the calories. So, actually it is only 3Tbsp of Sugar You can make these in a muffin tin or just in small mounds on an oiled cookie tray

Recipe Ingredients for Everything But the Kitchen Sink Muffins or Mounds

2 cups of Flour
1/4 cup Flax Seed
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1/2 tsp Cinnamon
3/4 tsp Nutmeg
2 Carrots
1 Apple
1/4 cup Sunflower Seeds
1/4 cup Dried Cranberries
1/8 cup Ginger
1/4 cup butter
4 tbsp Sugar
2 Egg whites
1 banana

Recipe Directions for Everything But the Kitchen Sink Muffins or Mounds

  1. Grate the carrots and the apple

  2. Apple can be used with or without skin

  3. Any apple will do. I like Pink Lady

  4. I prefer grinding fresh nutmeg

  5. mix wet

  6. mix dry

  7. mix together

  8. Drop into mounds on a cookie sheet

  9. Sprinkle with (just a littel) cinnamon and sugar (optional)

  10. bake at 350 for about 12min
