OK, it isn't the healthiest, but it sure is good. Use it on one of your reward days!

Recipe Ingredients for everyday Italian Sausage and Peppers

1/4 cup extra-virgin olive oil
6 links Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup cooking wine
15 ounce diced tomatoes

Recipe Directions for everyday Italian Sausage and Peppers

  1. Boil sausage in water to cook thoroughly. (Note: we tried undercooking them, but found they took forever to finish up in the sauce.)

  2. Add oil, red peppers, onions, salt in a pan and cook on med-low heat.

  3. Add rest of the ingredients and bring to a simmer

  4. Cut sausage into bite size pieces, add to sauce, let simmer 10-20 minutes.

  5. Serve in a bowl, or in a roll, add parmesan cheese to taste.
