This orange coloured stew is brimming with the taste of blackened long green peppers, tangy feta and hearty tomatoes, and is a European dish my mother made me as a child. Serve with a slice of grain bread on the side. Use the long variety of green peppers that are pale-coloured for best taste.

Recipe Ingredients for European Tomato-Pepper-Feta Stew

7 green peppers
2 cloves garlic
7 tomatoes
3/4 cup feta cheese
1 tsp cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
3 cups water

Recipe Directions for European Tomato-Pepper-Feta Stew

  1. Chop peppers into 2 inch pieces. Heat stove on high and grease frying pan with low-calorie cooking spray. Saute until slightly soft and visibly blackened in small areas. Add to medium-sized pot.

  2. Chop tomatoes into inch-sized cubes. Add to pot. Using same frying pan you used to saute the peppers, lightly saute the garlic, slicing into thinnish rounds.

  3. Add water to pot, and season with cayenne pepper, salt and ground black pepper.

  4. Simmer on medium low heat for 35 minutes. Serve hot.
