Recipe Ingredients for Ethiopian Sloppy Joes

1 1/2 lb ground beef
4 cloves garlic, minced
3 onions; finely minced or pureed in food processor
1 tbsp chili powder
1/2 tsp ground cumin
5 russet potatoes, peeled and cut into small cubes
2 tomatoes; chopped very fine or pureed in food processor (or 8 oz can tomato sauce)
2 cups water
8 roll hamburger buns

Recipe Directions for Ethiopian Sloppy Joes

  1. Heat a very large skillet or heavy-bottomed stockpot over high heat, then add beef and garlic; cook until beef is browned, breaking into small pieces with the side of a spoon. Spoon off as much fat as possible, then push beef and garlic to edges of pan, making an empty space in the center.

  2. Add onions to the center of pan and cook over medium heat, stirring a couple of times until some of liquid evaporates 2-4 minutes. Add chili powder and cumin, stir to combine.

  3. Add potatoes, tomatoes, and water; stir well. Cook, covered, over medium heat until potatoes are tender, about 30 minutes, stirring frequently. Reduce heat and add a bit more water if mixture starts to stick to bottom of pan. here should be a moderate amount of sauce.

  4. Serve warm over hamburger buns.
