Red lentils with Ethiopian spices

Recipe Ingredients for Ethiopian lentils

1 medium (2-1/2" dia) Onions
10 grams Garlic
10 grams Ginger Root
1 tbsp Paprika
3 tsp Superior Touch Vegetable Base
180 grams Red Lentils
33 grams Tomato Paste
15 oz Petite Cut Diced Tomatoes
3 cup (8 fl oz) Water
1 tbsp Olive Oil

Recipe Directions for Ethiopian lentils

  1. Sweat onions in olive oil. Add berbere (paprika is listed in recipe; try the blend here: http://www.epicurious.com/recipes/food/views/Ethiopian-Spice-Mix-Berbere-104015). Cook the berbere for 3-5 mins, stirring, then add garlic, ginger, tomato paste, and tomatoes, and stir to combine. Add lentils and vegetable stock, and stir.

  2. Bring to a low boil, and simmer until lentils are tender and have absorbed most of the water.
