4 cup Organics Garbanzo Beans
3 serving Extra Virgin Olive Oil
1 medium raw Onion Red
2 cloves, raw Garlic
0.5 cup Tomato Sauce
17 oz Potatoes, Red, Flesh And Skin

Recipe Directions for Ethiopian Chickpea Stew

Mix berbere spice mix (another recipe) and set aside. Drain and rinse chick peas -- mix with 1 Tbsp. olive oil and roast for 18 minutes in 450 degree oven. Set aside. Meanwhile, heat 2 Tbsp. olive oil in big pot, add garlic, onion, and ginger root. Cook until tender. Add Berbere spice and cook, add tomato sauce and cook 2 minutes. Add the remainder of the ingredients (remember to add a total of 4 cups of chicken broth). Bring to boil, cover and cook for 20 minutes. Uncover and cook an additional 25 minutes until thickened. Very spicy and good.
