A healthy base muffin recipe just add whatever takes your fancy! (eg: dried cranberries, chocolate chips etc.)

Recipe Ingredients for Esther's healthy muffins

1 1/2 cups self raising flour
1/3 cup rolled oats
1/4 cup brown sugar
1 tablespoon honey
2/3 cup low-fat milk
2 tablespoons olive oil
1 egg, lightly beaten

Recipe Directions for Esther's healthy muffins

  1. Preheat oven to 180c or 160c. line twelve hole patty pan with pretty patty cases.

  2. Combine dry ingredients in a large bowl.

  3. Stir in optional ingredients (ei; dried cranberries, chocchips etc)

  4. Combine oil, egg, milk and honey untill just combined.

  5. Spoon mixture into pan.

  6. Bake for 20 minutes.

  7. MMmmm...tasty :)
