Recipe Ingredients for Espresso Brownies

1 1/2 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1 1/2 cup white sugar
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup soy milk
1/2 cup coffee
1/3 cup oil
60 g chocolate chips (1/2 cup)
1 tsp vanilla extract

Recipe Directions for Espresso Brownies

  1. Preheat oven to 325 degrees. Combine dry ingredients and mix thoroughly. Add wet ingredients and chocolate chips until just mixed. Bake for 20 to 22 minutes or until toothpick comes out clean.

  2. NOTES: The original recipe called for 1 1/2 cups soy milk and 1 shot espresso. It did not include vanilla extract, and called for only 30g (1/4 cup) chocolate chips. I modified the recipe to make 42 mini cupcakes rather than 6-8 large brownies, and consequently baked them for roughly 20 minutes rather than the recipe's 55-60.
