Really good, quick escarole soup! HUGE servings!

Recipe Ingredients for Escarole Soup

1 Original Field Roast Grain Meat Sausages
1 cup petite diced tomatoes
32 oz Light and Fat Free Chicken Broth
2 cups water
2 cloves garlic, minced
1 medium yellow onion, diced
1 carrot, diced
1 packet chicken boullion
1 head escarole
2 cup cannellini beans
1 tsp red pepper flakes
1 tbsp grapeseed oil

Recipe Directions for Escarole Soup

  1. Brown sausage the transfer to plate.

  2. Add oil to pan and cook onions and carrots for about 3 minutes. Add garlic, red pepper flakes, tomatoes and any hard white ends of the escarole leaves. Cook additional 5 minutes. Add broth, 2 cups of water and boullion packet.

  3. Simmer over medium heat for 10 minutes. Add tops of escarole, beans and sausage back to pan. Cook for 10 minutes or until escarole is wilted and beans are heated through.
