Recipe Ingredients for Escarole Soup

4 t butter
2 t onion
1 lb escarole
1 tsp salt
3 c vegetable broth
0.33 c rice
1 1/2 t parmesean cheese

Recipe Directions for Escarole Soup

  1. saute onions in butter

  2. toss chopped escarole in onion butter, adding salt

  3. steam till tender

  4. add broth, rice

  5. add parmesean cheese prior to serving.
