Recipe Ingredients for Escarole and Navy Beans

1 lb Escarole
3 anchovies, chopped
3 garlic cloves, chopped
3 tablespoon olive oil
5 black olives, pitted chopped
1/4 cup capers, salted, rinsed
1/4 cup pine nuts, dry, roasted
1 cup navy beans, cooked
1 Salt and pepper to taste

Recipe Directions for Escarole and Navy Beans

  1. 1 lb Escarole, steam cooked until soften

  2. In a large pan, sautee:

  3. 3 anchovies, chopped

  4. 3 garlic cloves, chopped

  5. 3 tablespoon olive oil

  6. Add cooked escarole with:

  7. 5 black olives, pitted chopped

  8. 1/4 cup capers, salted, rinsed

  9. 1/4 cup pine nuts, dry, roasted

  10. Optional add,

  11. 1 cup navy beans, cooked

  12. Salt and pepper to taste
