Steamed greens, with oil/butter, garlic and a splash of fresh lemon juice

Recipe Ingredients for Escarole Greens

460 grams escarole, fresh, chopped
1 T. peanut oil
3 T. butter
1 oz garlic, minced
1 T. lemon juice

Recipe Directions for Escarole Greens

  1. Fresh cut the stem, wash & clean each leaf of 1# head escarole.

  2. Heat (med-hi) peanut oil in large saute pan.

  3. Cut leaves into 2-3" pieces.

  4. Cover and Steam wet leaves and stem pieces, until wilted and tender.

  5. Add a little water if necessary.

  6. Salt and pepper to taste, maybe onion powder.

  7. Turn with tongs as necessry.

  8. Dab butter on top, cover & allow to melt.

  9. Splash of lemon juice, if desired.
