Recipe Ingredients for Escarole and beans

2 cups escarole
1/2 cup cannelini beans
1 tsp garlic
1/2 cup low sodium chicken broth
1 tsp salt
1 tsp olive oil
1 tsp crushed red pepper flakes

Recipe Directions for Escarole and beans

  1. Chop and clean escarole.

  2. Blanch in salted boiling water for 3 minutes or until bright green.

  3. Drain and rinse with cool water

  4. Saute garlic and red pepper in olive oil till fragrant

  5. Add beans, escarole, and chicken stock.

  6. Simmer till flavors combine

  7. Enjoy hot or cold
