2 cups beans, cannelini, white kidney
1 head escarole
1 tablespoon olive oil
1/2 cup onion, chopped
2 cloves garlic, minced
1/4 teaspoon pepper
2 cups water

  1. Saute the onion and garlic in olive oil in saute pan

  2. Add the other ingredients

  3. Cover

  4. Simmer for 20 minutes
