Recipe Ingredients for Escarole & Bean Soup

2 lbs escarole, washed
38 oz cannellini beans
6 cloves garlic
4 tbsp olive oil
4 cups water
1 salt
1 pepper

Recipe Directions for Escarole & Bean Soup

  1. Wash 2 lbs of escarole and place in soup pot with 4 cups of water. Cover and cook until escarole is soft.

  2. Add 2 19-oz cans of cannelline beans.

  3. Chop and add garlic and olive oil.

  4. Season with salt and pepper to taste.

  5. Add more water as needed.

  6. Cook for about 45 mins. or longer if needed.
