Recipe Ingredients for Escalloped Potatoes

3 medium potatoes
3 tbsp butter
1/4 cup flour
1 cup soy milk
1/2 tsp salt
1/4 tsp pepper
1 cup swiss cheese
2 tbsp parsley
2 tbsp breadcrumbs
1 tbsp butter

Recipe Directions for Escalloped Potatoes

  1. Slice and boil potatoes until tender.

  2. Drain.

  3. Melt 3 tbsp butter, stir in flour. Cook 1 minute. Gradually add milk. Cook and stir until thick and bubbly.

  4. In small greased casserole dish layer white sauce, potatoes, cheese, and parsley, beginning and ending with sauce. Sprinkle top with breadcrumbs and dot with 1 tbsp butter.

  5. Cover and bake at 305 for 15 minutes or until thoroughly heated. 4 servings.
