Adapted from Quaker's Best Oatmeal Muffins. Makes one dozen. Note: If you opt to use frozen instead of fresh berries do not thaw, put them in the muffins right from the freezer.

Recipe Ingredients for E's Whole Grain Blueberry Muffins

1 cup all-purpose flour
1/2 cup wheat germ
1 cup PC Organics Quick Oats
1/2 cup granulated sugar
1 tablespoon baking powder
1/8 teaspoon salt
1 cup skim milk
1/8 cup canola oil
1 large egg, lightly beaten
1 teaspoon ground cinnamon
1/2 cup blueberries, fresh

Recipe Directions for E's Whole Grain Blueberry Muffins

  1. In a large bowl combine dry ingredients and mix well.

  2. In a separate bowl combine egg, milk and oil and mix well.

  3. Add wet ingredients to dry ingredients and stir just until moistened. Add blueberries, stirring in gently.

  4. Fill muffin tins and bake at 400F for 18-20 min or until golden brown. Let muffins stand a few minutes then remove from pan.
