Recipe Ingredients for E's Vegetable Ragout

1 tablespoon dried oregano
1 teaspoon olive oil
1 cup chopped onion
2 cups eggplant, peeled and diced
1 cup diced zucchini
1 cup diced carrot
1 teaspoon chili powder
14 1/2 ounce canned tomatoes, diced and undrained

Recipe Directions for E's Vegetable Ragout

  1. Prep vegetables and heat oil in large saute pan.

  2. Saute carrots and onion for 3-4 minutes. Add eggplant, and zucchini and saute an additional 3-4 minutes.

  3. Add tomatoes, and chili powder/paste and bring to a boil, lower the heat and simmer for about 15 minutes.

  4. Serve with E's Polenta w Parmesan. One serving of ragout is about 1 cup.
