Excellent use of leftover turkey! Original recipe from myrecipes.com called for turkey sausage and 3 cans of cannellini beans rather than cannellini and black beans

Recipe Ingredients for E's Turkey and bean casserole

382 g turkey meat, diced
1 cup onion, diced
28 oz. cannelini beans, rinsed and drained
14 oz. black beans, rinsed and drained
2 tablespoons tomato paste
2 tablespoons brown sugar
2 cups chicken broth
1/2 teaspoon dried thyme
1/4 teaspoon ground black pepper
254 g (2 cups) zucchini, diced
3/4 cup whole wheat bread crumbs
2 teaspoons garlic paste

Recipe Directions for E's Turkey and bean casserole

  1. Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion and turkey (sausage) to pan; sauté for 5 minutes or until browned. Add garlic, and sauté for 2 minutes. Stir in chicken broth, scraping pan to loosen browned bits. Stir in 2 tablespoons brown sugar, tomato paste, dried thyme, freshly ground black pepper, and beans. Bring to a boil; cover, reduce heat, and simmer for 5 minutes. Remove from heat.

  2. Add diced zucchini, stir and place mixture into a medium size casserole dish.

  3. Sprinkle breadcrumbs evenly over bean mixture, and bake at 375° for 15 minutes or until browned.
