Recipe Ingredients for E's Soft Ginger Cookies

2 1/4 cups all purpose flour
2 tsps. ground ginger
1 tsp. baking soda
1 tsp. ground cinnamon
3/4 cup margarine
1 cup granulated sugar
1 large egg
1/4 cup molasses

Recipe Directions for E's Soft Ginger Cookies

  1. In a medium bowl combine flour, ginger, cinnamon, and baking soda; set aside.

  2. In a large mixing bowl beat margarine for 30 seconds. Bet in the 1 cup of sugar. Add eggs and molasses; beat well. Stir flour mixture into egg mixture.

  3. Shape dough into 1 inch balls using about 1 tablespoon of dough for each. Roll balls in the 2 tablespoons of sugar to coat. Place balls about 2 inches apart on an ungreased cookie sheet.

  4. Bake in a 350F oven about 10 minutes or until light brown and still puffed. Cool cookies on cookie sheet for 2 minutes. Transfer cookies to wire rack and let cool.
