Recipe Ingredients for E's Pumpkin Muffins

2 cups all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 large eggs
1 cup 1% milk
1/3 cup sugar
1/3 cup brown sugar
1/4 cup canola oil
1 teaspoon vanilla
1 cup pumpkin

Recipe Directions for E's Pumpkin Muffins

  1. Ensure rack is positioned in the middle of the oven and preheat oven to 400F. Grease muffin tins or line with paper cups (paper tends to stick a bit, if you grease the cups remove muffins at 15-16 minutes or they tend to burn)

  2. In a large bowl whisk together flour, baking powder, salt, and spices. Set aside.

  3. In a second bowl mix together eggs, milk, sugars, canola oil, vanilla and pumpkin.

  4. Add egg mixture to the flour mixture and stir together with a few strokes, just until combined. Do not overmix, the batter will be a bit lumpy. Divide the batter amongst prepared muffin cups.

  5. Bake at 400F for 17 minutes (or less if the tins are greased) Let cool 2-3 minutes before removing from muffin tins. Serve as soon as possible/within a few hours of baking.
