Delicious and creamy but time consuming and not the healthiest dish. Serving is side dish size - about 1/3 cup.

Recipe Ingredients for E's Parmesan Risotto

3 tablespoons butter
5 cups chicken stock
1 cup onion, finely diced
300 g (1 & 1/2 cups) dry Arborio rice
1 teaspoon white wine vinegar
1/3 cup parmesan cheese, finely grated

Recipe Directions for E's Parmesan Risotto

  1. In a medium sized, heavy bottomed saucepan, melt 2 tablespoons of butter (can sub 1 tablespoon olive oil if necessary) over medium heat.

  2. Add 1 cup of onion and cook until translucent, about 10 minutes.

  3. In a separate pot, bring stock to a boil and then turn off the heat.

  4. Add 1&1/2 cups Arborio rice and cook the rice, stirring occasionally, until translucent, about 5 minutes. Do not allow the rice to brown.

  5. Add 1 cup of the warm stock to the rice, or slighty more, enough so that the rice is jus covered and cook at a vigorous simmer, stirring occasionally.

  6. When the rice starts to get thick, pour in another 1/2 cup of stock, and when that is absorbed and the rice thickens, add another 1/2 cup of stock. Do not let the rice dry out. After the second or third addition of stock, start tasting the rice for doneness as well as seasoning.

  7. Cook until the rice is tender but still has a firm core, 20 - 30 minutes in all. The final addition of stock is the most important: add just enough so the rice finishes cooking and not so much that the rice becomes soupy.

  8. Add the remaining tablespoon of butter, and the parmesan cheese and stir vigorously to develop the creamy starch. Turn off the heat, allow it to rest for 2 minutes and serve. Add a bit of stock if the rice gets too thick.
