Recipe Ingredients for E's Morning Glory Muffin Squares

1 1/2 cups whole wheat flour
1 1/2 cups All Bran Flakes
1 tbsp. baking powder
1 tsp. ground cinnamon
1 tsp. allspice
1/2 tsp. baking soda
1/8 tsp. salt
1 large egg
1/2 cup brown sugar
3/4 cup plain non fat yogurt
1/3 cup canola oil
2 tbsp. molasses
1 1/2 cups grated carrots
1/2 cup seedless raisins

Recipe Directions for E's Morning Glory Muffin Squares

  1. In a large bowl, combine flour, bran cereal, baking powder, spices, baking soda and salt.

  2. In a separate bowl whisk together egg, brown sugar, yogurt, oil and molasses.

  3. Stir egg mixture into flour mixture just until moistened. Stir in carrots and raisins.

  4. Spread mixture into a non-stick or lightly oiled and parchment lined 9-inch (2.3litre) square baking pan.

  5. Bake in a preheated 350F oven for 30 to 35 minutes, or until centre springs back when gently touched.

  6. Cool and cut into 16 squares (Serving size: one 62g square)

  7. **Notes: Brown sugar could probably be lowered to about 1/3 cup and still produce a good level of sweetness. Honey can be used in place of molasses if required(taste will be slightly sweeter). Allspice is optional.
